1

The Mix was Alain Ducasse second restaurant in New York. Located in 68 West 58th Street. It did open the 10th of September 2003 and closed in October 2005

For this place Alain Ducasse delegated the cooking duties to Douglas Psaltis, a veteran of his kitchens, and entrusted the design to Patrick Jouin, a frequent collaborator and Philippe Starck protégé.

Patrick Jouin is known for the design of "The Plaza Athénée" Avenue Montaigne in Paris.

Designer Patrick Jouin asked souvenirs from the earth to produce the video programming he needed for his very futuristic chic interior of the MIX. 2

3   For the very vip chef's table in the restaurant, souvenirs from the earth invented the "video starter", 10 small films displaying slowly rotating dishes, put together by the kitchen crew. Projected on a round support from above, the films gave guests the impression to assist the making of a painting, consciously composed by edible elements

4   Another production of souvenirs from the earth was shown in tiny LCD screens, hidden in the decoration elements in the bar area and displayed within the menu panel outside the restaurant. This very pictorial films showed the coming and going in the kitchen and the different complexe steps in the elaboration of the dishes.

5   The programming followed exactly the restaurants schedule showing intense activity in the rush hours or an empty or cleaned up kitchen when the restaurant was closed.
